This is really an awesome module, I am amazed.

I wonder whether there is a way how to add a term (like using an alternative free tagging field) when a child is missing. Or is it so that in such case user has to save the unfinished node, go to the vocabulary, add the child, then go back to the node and select it?

This is supported in version 3, of which a beta will be released shortly :)

How dangerous, frankly, is it for me to start using the development version 3 -- taking into account that this is the feature I'll need?

It's very, very safe to use HS 3. Nothing bad will happen to your site, no data will get lost, no security leaks. The worst problem you could face is that there might be some minor bugs (more cosmetic than anything). It's already been tested A LOT, as you can see in the number of issues I've fixed the past few days. But 90% of these issues were very minor, so you're certainly safe :)
