Issue Summary
Currently, administrative options are applied to every content type you want to use with the module.
Does anyone else think it would be better to have the admin/settings/coherent-access options instead show up on each admin/content/node-type/* page, like automatic node titles module?

I'm open to merging this functionality in if someone wants to develop it.

Which settings should be specified by node type?
'Node types that are allowed to use coherent access' Seems to be easy to work with on the Coherent Access configuration page. But this could be replaced by checkboxes on each node-type edit page. I am not sure it would be an improvement...
'If checked, new nodes will default to private', 'trust editors' and 'Send email when viewers or editors are added' would all work well as checkbox on the node-type edit pages. But what about the default email subject and body ?
The benefit of moving them is flexibility in independently configuring node types. The drawback is having to adjust all the settings independently if you want them to be the same, but different from the default.
I am willing to help if there is a good argument for doing this, but I am not sure its worth the effort without seeing the potential uses. Centralized administration has some advantages.
