For a node, there is a group of 'Publishing Options'.
I want to write a module that overrides this (site wide) - what is the right hook? (form alter?)
Essentially, I want to remove and offer/store different options.

There is already a module for that, but I would guess that if you develop more features that wouldnt be regarded as a bad thing.

This is for D6.
The http://drupal.org/project/override_node_options is for D5 :(

Take a look in the issues, there is a bug-free patch there.

A stable D6 version has been released since these posts but somehow this thread fall higher in drupal's search...
