It would be nice to be able to send thank you emails to people who came much like the confirmation and reminder emails.

that is nice.

But you allow for a standard signup and reminder email under signup settings. It would be nice to have a thank you one also.

Ahh, a 2nd automatic email after events are over. Basically a 2nd reminder email with a negative "start" time. ;) Yet another reason to re-think all this junk as part of #290305: Split out email functionality into separate submodule(s).
