I have many different hosting accounts and I've noticed many of the auto-installers don't install the current version, some are months old. Isn't there a bit of a security risk with that? I know not a big risk, but still more of a risk than with the up to date versions anyway.

No one should ever use an auto-installer. Drupal is very easy to install so theres just no need to use an auto-installer.
Like you say, often the version is out-of-date and are correct in saying its a security risk.
You should nag your hosting company about it.
