I'm sorry if I missed this, but I can't seem to find out how to change the text that is visible when hovering. Where might I be able to find the coding to change this?

you don't alter the code.

go to administer -> content types
edit the content type in question
expand the fivestar collapsed menu
once there expand the star labels collapsed menu
there you can change the labels.
