I just updated to version 6.x-2.1, yet, my update status is suggesting that I "update" to 6.x-2.0. Come again?

Whenever a new version of *any* module comes out, the update status takes a few hours to update. It should be correct by tomorrow. That's just the way the whole update system works, nothing to do with Date.
