I hope that made sense!

I'm wanting to provide subdomains for members on which there are say 6 or so pages linked from a menu which they can then edit but not be able to create new content themselves.

I've tried the domain_access module but am finding it confusing although it was my first choice due to the domain_user module. I'd prefer the domains to be created automatically.

If anyone can help I'd appreciate it.

Without knowing more about the intended use of the 6 pages, is the use of Organic Groups out of the question? http://drupal.org/project/og

You would be able to then not allow creation through the permissions, but still allow editing of those nodes.

The six or so pages would just be like a mini site of their own - home, about, etc - I'm trying to 'idiot proof' it as far as possible, for want of a better phrase :)

I haven't personally used domain_access, so maybe if there is something specific it's doing or not doing, or maybe what you're getting hung up on - someone might come along that knows :-)
