For the automated email integration part, I'd like to be able to select an organic group under which the tickets are created. Is that possible?

This is not implemented nor is it planned. Perhaps an OG integration module would be appropriate? Or a small patch.

Recent releases added support for node access, allowing integration with organic groups. Closing old ticket.
