In widgets such as display fields and in views for fields it would be great to have an option to not only select each imagecache preset to display the image as, but also which imagecache preset will be displyed once a user clicks the image.

This would be a nice feature and I will add it sooner or later. I believe lightbox2 already does this.

In the meantime you do have a global setting that controls this, look for "Image cache preset" on the Thickbox settings page.
