Another query.

Sending out the emails seemes to be going well in as much that log indiactes the emails are going out. However, on each log entry it has Severity : debug

Should I be worried and what does this mean?

You did turn on the 'Log email' option in Simplenews settings. Turn it off and the messages are gone.
