Currently, the first term in an associated vocabulary is chosen by default and it doesn't appear to be possible to save a profile without selecting a term. (Where, by comparison, it's possible to save a node without being forced to select a term.)

Edit the Vocabulary and uncheck the "Required" option.

Edit your profile field type and uncheck "The user must enter a value." Then you can save the profile with the default value "-None selected-". This corresponds to the default behaviour when saving a node with taxonomy terms.
