I'm probably just missing something obvious but I can't figure out how to create directories or categories which make the offer/want section completely useless. I deleted the paga content type so that might have done it...

Use the taxonomy system.
Offers and wants are no longer supported in this module.
Version 1 was intending to be a complete community trading solution, with offers and wants.
Version 2 was only accounting.

Offers and wants are easy to create as content-types, taxonomy and views. I've got a module to do this in an advanced way for LETS-like groups, but I haven't released it. Contact me if you want it.
