Image assists adds several attributes to the img tag that do not validate as XHTML strict. W3C validator complains about the following:

Attribute "extension" is not a valid attribute
Attribute "file_size" is not a valid attribute
Attribute "mime_type" is not a valid attribute

Could these be removed or changed so that a site using image assist will validate again?

Sorry, but those attributes are not added by Image Assist.
