but when creating a new product, the sku (which is actually required, so a temp one should be made like for the title), the price, the catalog membership and possibly other fields are not being saved.
this does not happen during an edit.

This is the same issue with cck fields that is mentioned on the project page. I was about 80% finished with fixing it by using ajax uploading of images, but got really busy. Unfortunately for now you have to create the product, then edit and upload.

The fix has already been implemented in the Aurigma module. That may be worth looking into if you need something right away.

Has this issue been addressed? We've tried multiple uploaders with Ubercart, and all of them have had major issues. :( Would to love to be able to implement this.

This hasn't been addressed. I think this module has been made obsolete by plupload. I'd try that.
