I have a site where I need to create graphs based on data within a single node. Would it be possible to create a way for Visualize to be a CCK Multigroup format? Or some other method?

You could use the included API functions for manually embedding a graph without using Views, take a look to the documentation over here http://drupal.org/node/541370
