bisonbleu commentedHere I beleive : admin/store/products/classes. Then click "edit" for the desired class and then the Fees Tab (see "Normal UI").
Note that you may not see your list of Fees (see Bugged UI). See this issue for more informations : http://drupal.org/node/763164
