There are a great many options not available to my sellers. The product node creation page does not include dimensions, weight, how many of a product are available, or etc.

I assumed this was a permission problem, but I can't seem to figure out what permissions are set incorrectly. I have "create" and "edit" own products checked, obviously, since they can make their own product (the creation screen just lacks a number of fields).

Does anyone know what permissions need to be set in order to give my sellers the ability to control all fields on a product node?

I just gave a seller role every single permission in the list. They are still unable to enter these aspects of a product when on product creation. My root administrator account can. I have absolutely no Idea what is going on.

I have discovered the problem through a passing comment someone made about "weight" in the 10th comment of this thread http://drupal.org/node/591474

Apparently, there is a checkbox titled "hide extra fields" in home>>administer>>store administration>>configuration

This needs to be OFF for your sellers to have full access. This being on by default seems extremely annoying to me, but maybe it is helpful for others.
