An additional option for Role acess would be very nice:

Either a Hide List like in http://drupal.org/project/menu_per_role module
and / or a negation check box

I spoke to merlinofchaos about this on irc and am marking this an unassigned task. If anyone wants to roll up their sleeves and write a patch it would be awesome.
Please not that views access plugins are currently somewhat lacking and it might take a while, if at all to get patched.
From the options you provided the the NOT option is better than the other....
In CTools, the NOT option is universal; any access plugin can be reversed. Views could do the same.
