In field_collection_item_access(), entity_access() and field_access() are used to determine access to field, but the $op argument is wrongly used.
entity_access() expects 'view', 'update', 'create' or 'delete' and field_access() expects 'edit' or 'view'.

Hum, sorry, I realized I'm wrong here, the implementation is perfectly correct : if we want to add, delete or modify a field, that means we want to *edit* the entity.
