Go to admin/commerce/config/order-types/[order-type]/edit (es: admin/commerce/config/order-types/default/edit) or admin/commerce/config/order-types/add and edit the field "Send a copy of the receipt to this email" with tokens (es: [commerce_order:store_id:entity:mail] for the mail of the store the order belong to).
Note: version 1.x-dev now includes Symfony mailer integration (symfony_mailer_bc submodule must be enabled).
