If your using both these modules it seems you must give a user the permission to toggle multistep if you want them to be able to edit fields that are on any step but #1. Not sure if this should be a bug report for editablefields or multistep so my apologies if this is in the wrong place. Hopefully this post will at least stop anyone else from having to use the process of elimination to figure out what permission they need.
