Problem/Motivation

Currently Sous requires Lando. Add DDEV support.

Proposed resolution

Add a variable that we'll import into all of our scripts that will allow them to work with either Lando or DDEV. DDEV will be used by default, and will spin up when the composer create command is run. README will include instructions on using Lando.
